Baked Herb and Parmesan Potato Recipe - Video Included


Yesterday was one of those crazy days where my daughter had two events after school. 
I didn't want us to eat out late, so I had to come up with something quick, easy, but filling and delicious. 
Here is what I came up with - see video.

While I was Sprouts, I grabbed one of their rotisserie chickens. 

After I picked up Emily from school, we had an hour before we had to go to our first event. 

Rotisserie chickens taste so much better if you put them in a roasting pan with some broth and more BBQ sauce. Put it in the oven for around 10 - 20 minutes to warm back up. Trust me. It will taste better.

I also had some Yukon gold potatoes, so I quickly put together my Baked Herb and Parmesan Potato recipe and put that in the oven with my chicken. I also had some leftover Baked Squash casserole that I re-heated while the oven was on. 

By 4:45, we sat down to a good dinner that kept us satisfied through both after school events. 


Here is the recipe for the potatoes:





Baked Herb & Parmesan Potatoes

Ingredients:
 - 3 to 4 red potatoes or Yukon gold
 - 1/4 tsp onion powder, salt, garlic powder, dried oregano, dried thyme, pepper, parsley, dried rosemary
 - 2 Tbsp olive oil
 - 1 Tbsp grated Parmesan cheese

Directions:
Preheat oven to 375 degrees. 
Rinse and dry the potatoes and slice or quarter them. 
Place in a gallon plastic bag or bowl. 
Add the herbs and spices and olive oil. 
Mix together until evenly coated. 
Lay the potatoes on a lined cookie sheet. 
Bake around 20 to 25 minutes.  
After removing from the oven, add the grated Parmesan to the potatoes and enjoy!
