Three Cheese Zucchini Gratin Recipe and Review


I love trying new recipes so I decided to give this three cheese zucchini gratin recipe a try. 
I can always use another great side dish recipe in my recipe box.

I will be making a couple of changes to the original recipe to fit my family needs. 









Ingredients:
3 Medium Sized Zucchini or Squash
1 Cup Mozzarella Cheese, Shredded
1 Cup Parmesan Cheese, Shredded
1 Cup Cheddar Cheese, Shredded
1/2 Cup Milk
1/2 Cup Heavy Whipping Cream
2 Tablespoons Flour
2 Tablespoons Butter
1/2 Teaspoon salt
1/2 to 1 Teaspoon Garlic Powder

Topping:
1/2 Cup Bread Crumbs
1/4 Cup Parmesan, Grated
1 Tablespoon Butter, melted

Preheat oven to 375 degrees. 

Lightly spray a 2 quart baking dish with cooking spray. 

In a medium saucepan, melt 2 Tablespoons butter. Whisk in the flour and cook for 2-3 minutes until it has thickened up.  Slowly whisk in the milk and heavy cream. Add in the cheeses until melted. Stir in the garlic powder and salt. Set aside. 


Cut zucchini in 1/4 inch slices. Layer 1/2 on the bottom of the casserole dish. Add 1/2 of the cheese mixture.  Layer the remaining zucchini and then the cheese sauce. 


For the topping, mix together the bread crumbs and Parmesan. Sprinkle over the top of the zucchini dish. Pour the 1 tablespoon of melted butter on the top of the crumb mixture. 


Bake for 25 to 30 minutes or until sauce is bubbly and the crumb topping is brown.  You can then broil the top for about 5 minutes. 




This recipe was so delicious.  We loved it!
 I will be making this again.  
I am also going to write the cheese sauce on a separate recipe card. 
We had this with Panko Breaded Cod from Costco and some corn. 

It would be good over other vegetables.  This recipe would also be great taken to a family event, pot luck, etc.
I hope that you will give this recipe a try.  If you are too busy during the week to make this, try it with a good family dinner over the weekend.
