Twice Baked Potato Casserole - New Recipe Try and Review

I have a new recipe try and review for Twice Baked Potato Casserole.

I found the original recipe here at Julie's Eats and Treats.

5lb russet potatoes
1 (3oz) package Real Bacon Bits
8oz Cream Cheese
1/2 cup butter
1 c. sour cream
2 1/2 cup grated cheddar cheese
2 tsp salt
1/2 tsp pepper

Preheat Oven to 350 degrees. Peel your potatoes and cut into chunks. Place into large pot and cover with water. Bring to a boil and simmer for around 15 minutes or until the potatoes are fork tender. 

Drain and place into a large mixing bowl. 

Using a mixer, beat until fluffy.  Next add the cream cheese, butter, sour cream, and mix until combined and fluffy.  Add in the cheddar cheese, half the bacon bits, and salt and pepper. Mix until combined. 

Transfer the potatoes to a baking dish. Top with remaining 1/2 cups cheddar cheese and bacon bits. 

Bake for 30 minutes or until the potatoes are heated through and the top is slightly golden brown. 

We really enjoyed this recipe and it is a keeper. 

This is a time consuming recipe that I will make on a weekend instead of a weekday. 

I also think that this would be wonderful with a big Sunday dinner spread. 

We served the potatoes with some chicken skewers from Costco and steamed broccoli.
