Garlic Mushroom Quinoa - New Recipe and Review


I have another recipe and review for you today for Garlic Mushroom Quinoa. 


This makes a wonderful side dish!




You can find the original recipe on this website here. I love Chungah's site and her recipes.  




Here is the video if you would like to see how this came together. 









Ingredients:
1 cup Quinoa
1 Tablespoon Olive Oil
1 Pound Mushrooms (I used Baby Bella), thinly sliced
3 - 5 cloves garlic, minced
1/2 teaspoon, dried thyme
Salt and Pepper, to taste
2 Tablespoons grated Parmesan

Cook your Quinoa according to the package directions. 

Heat olive oil in a large skillet over medium high heat.  Add mushrooms, garlic, and thyme, salt, and pepper. Cook, stirring occasionally, until tender, about 3-4 minutes. Once done, stir in the Quinoa with the mushrooms until combined.  Add the grated Parmesan on top. 




Definitely add the Parmesan on top.  It was delicious!



We loved this recipe and I will be adding this to my recipe box. 





I served this with pork chops and a side salad. 


It is a very filling side dish.

September 2014 Project Life Layout Plus 12x12 Calendar Layout


Today I want to share with you my September 2014 project life layout and my 12x12 September Calendar layout. 


Here is the calendar layout.  I use the collect app on my iPhone and have it printed at Costco.

I used some October Afternoon paper, thickers, and other embellishments from my stash.

I didn't take a lot of photos for September, so this month fit into one page protector. 





This month I covered fall home decor, my mantel, Emily's cross country meets, band events, and food favorites. 



I used the Crate Paper Notes and Things paper collection. 



I used a Becky Higgins/Heidi Swapp flip pocket page protector.

Copycat Cafe Rio Sweet Pork - New Recipe Try and Review


This week we tried a new recipe called Copycat Cafe Rio Sweet Pork. 





The recipe comes from Creme de la Crumb and can be found here





There are three steps to this recipe. 

Marinade - Step One
3/4 cup Coke
1/4 cup brown sugar
2 - 3 lb Pork Roast

Step Two:
1 cup Coke
1/4 cup water
1/2 tsp Garlic Powder*
1/4 tsp Mrs. Dash Onion & Herb*
1/4 tsp Chili Powder

Step Three:
3/4 cup Coke
3/4 cup brown sugar
1/4 tsp chili powder
1 - 4oz can diced green chilies
1 - 10oz can mild enchilada sauce

*(different from the original recipe, but what I had on hand)

Step 1 - Place the pork into a gallon ziplock bag along with the brown sugar and coke. Place in the refrigerator for one hour or overnight. 

Step 2 - Add the pork to a slow cooker and discard the marinade. Add the ingredients from step two. Cook for 4 hours on high. 

Step 3 - Drain the sauce. Shred the pork, In a blender, combine the ingredients from step 3. Add to the slow cooker and pork and cook another 30 to 45 minutes.


Here is the final result. 



I served this on a corn tortilla with cheese, tomatoes, avocado, taco sauce, and sour cream.

I made a Rice, Cheese, and Bean bake for my side dish. 




The first bite was very sweet, but it got better with each bite.

August 2014 Project Life Layouts and Calendar Layout


Today I want to share with you my August 2014 project life layouts and my 12x12 August Calendar layout.

Here is the 12x12 calendar layout created with the Collect app from my iPhone and printed at Costco. 






I used an older collection from Cosmo Cricket called Snorkel to embellish the calendar plus some other goodies from my stash. 







I used two summer collections called Good Day Sunshine and I Heart Summer from Simple Stories to embellish these layouts. I also used die cuts from my Silhouette cameo and product from Elle's Studio. 






I am still enjoying using the collect app to capture my pictures and journaling. 



It is so easy to embellish these 4x6 photos with paper and stickers as shown below. 






I have always loved using collages in my layouts. 

In this picture below, I was able to use 4 different pictures in one 4x6 picture and pocket. 

I use Picasa or PicMonkey for my collages. 





For this month, I also used a snapshot from my weather app to grab our 100 degree days that are a regular for Texas in August. 

The yellow "you make me smile" banner piece is from Elle's Studio. 




For the next layout, I used a We R Memory Keepers 4x6 vertical page protector. 

I used the Collect app on my iPhone to create these 4x6 portrait sized prints. 

I kept it super simple with the embellishments. 





I had fun adding a Heidi Swapp flip album to this pocket.

I love using die cuts from my Silhouette Cameo. 


I cut the #rightnow piece below and backed it with patterned paper.

August is back to school time for us here in Texas so a lot of my pictures covered this topic for August. 




The back to school below was cut from my Silhouette cameo. 





The around here and circle arrow below is from Chic Tags.  It is always fun to add rub-on's to project life pics.

Pantry Tour and Video - How I Organize my Pantry


Hi there! I want to share my pantry tour video and how I organize it with you all. 


I had some YouTube subscribers request a pantry tour, so here you go!!


Here are some pictures of my pantry. 

 I tried to take pictures of each section so I will do my best to tell you what is in each section. 


I designed my pantry to be functional.  When I am meal planning and making my grocery list, it is so easy to look in my pantry and see what I am missing for recipes/meals. 

I have everything in categories that make sense for me and my family. 



This is in the pantry looking at the back of the door. This is an over the door spice rack system from Container Store. It can be found here.  This holds my sandwich bags, foil, saran wrap, etc. The bottom basket has house paint in mason jars that I use when I need to make paint touch-up's around the house. 





This is my spice rack that is on the wall behind the door.   



On this shelf I keep box/snack foods. The two baskets on the far end have packaged chips and crackers for Emily's school lunches.  I use the two aerobic steps to help me reach things on the top shelves and cabinets in the kitchen. 




This shelf holds coffee and tea products. The baskets with handles can be found here.  I use these to hold my rice products. 



This shelf holds several turntables/lazy susans that can be found here


I use these to categorize my tomato products, beans, soups, canned veggies, and other jar/canned type foods. 





This self holds baking products, packaged sugar, powdered sugar, chocolate chips in mason jars, another turntable with oils and vinegars. 


This top shelf holds extra mason jars and baskets. The baskets hold lunch kits, paper plates, plastic silverware, etc. The basket on the very end has a picnic blanket and plastic table cover in it. We have a cooler sitting on top that is easy to grab and use for quick picnics, etc. 




On the bottom of my pantry, I keep my recycle bin, trash can, baskets that hold cloth grocery bags, plastic bags and the two bins on the left hold cat and dog food. 




This shelf holds household products such as my trash can liners, wipes, Lysol, and my dusting/Swiffer supplies. 



These two baskets hold snack/grab and go type products.  

The basket on the right has nut products, pretzels, fruit strips, etc. 

The basket on the left is for Emily and has her favorite quick snack foods. 



These shelves hold oatmeal, condiments (peanut butter, syrups, ketchup, honey and nutella), chicken broth and my flour, sugar, and brown sugar products. 




Our cereal boxes are on the very top shelf.  




This basket holds our pasta supplies (various noodles and marinara/Alfredo sauce).  


Next to that is bread products. 



This shelf holds our chip products.





This self holds our popcorn products, paper plates, and my recipe boxes and meal planning binder. 




This top shelf holds my extra paper towels and cake and pie to go holders, a punch bowl, cake and cupcake stand.
