Copycat Cafe Rio Sweet Pork - New Recipe Try and Review


This week we tried a new recipe called Copycat Cafe Rio Sweet Pork. 





The recipe comes from Creme de la Crumb and can be found here





There are three steps to this recipe. 

Marinade - Step One
3/4 cup Coke
1/4 cup brown sugar
2 - 3 lb Pork Roast

Step Two:
1 cup Coke
1/4 cup water
1/2 tsp Garlic Powder*
1/4 tsp Mrs. Dash Onion & Herb*
1/4 tsp Chili Powder

Step Three:
3/4 cup Coke
3/4 cup brown sugar
1/4 tsp chili powder
1 - 4oz can diced green chilies
1 - 10oz can mild enchilada sauce

*(different from the original recipe, but what I had on hand)

Step 1 - Place the pork into a gallon ziplock bag along with the brown sugar and coke. Place in the refrigerator for one hour or overnight. 

Step 2 - Add the pork to a slow cooker and discard the marinade. Add the ingredients from step two. Cook for 4 hours on high. 

Step 3 - Drain the sauce. Shred the pork, In a blender, combine the ingredients from step 3. Add to the slow cooker and pork and cook another 30 to 45 minutes.


Here is the final result. 



I served this on a corn tortilla with cheese, tomatoes, avocado, taco sauce, and sour cream.

I made a Rice, Cheese, and Bean bake for my side dish. 




The first bite was very sweet, but it got better with each bite.
