Company Pleasin' Squash Casserole Recipe Share

Today I am sharing my Company Pleasin' Squash Casserole recipe. 

I had some YouTube subscribers request it, so I am more than happy to share. 

This recipe is a tried and true for me and it never fails.

Company Pleasin' Squash Casserole
4 - 5 yellow squash, diced (or you can use a bag of frozen squash)
1 Small to Medium Onion, diced
1 Can Cream of Mushroom Soup
8oz (1 cup) Sour Cream
1/2 Cup Milk
1 5oz Box Stove Top Stuffing Mix
3/4 to 1 Cup Shredded Cheddar Cheese or 1/2 jar cheese whiz
1 Tbsp Olive Oil
Salt and Pepper to taste

Preheat the oven to 350 degrees. Spray a baking dish with non-stick spray (9x9 or 9x13 size). Saute the onion and squash in a little bit of olive oil in a large skillet until soft. Combine all other ingredients in the skillet and mix until combined and the cheese is melted. Pour into your prepared baking dish and bake for 30 minutes or until bubbly. Enjoy!

I served this with grilled chicken skewers and corn.
