Recipe Share - Rice, Bean, and Cheese Bake


Today I have a fantastic side dish to share with you all!
This is a Rice, Bean, and Cheese Bake. 
It has become a family favorite.

Here are the ingredients. Super easy!

1 Can (16oz) Refried Beans
1 Box Spanish or Mexican Rice
1 - 8oz Block Cheddar or Mexican Blend Cheese, Shredded

Preheat oven to 350 degrees. Spray a casserole dish with nonstick spray. I used a 8x11 size pan. 

Cook your rice according to the package directions. 

While rice is cooking, spread the beans on the bottom of your casserole dish.  

Once the rice is done cooking, spread it out on top of the beans in the casserole dish. 

Sprinkle the cheese on top of the rice. 

Bake for around 20 to 30 minutes or until the cheese is melted and bubbling. 

Enjoy with tacos, fajitas, burritos, or enchiladas. It's all good together!





I love buying the block cheese and grating it for recipes. The flavor is just so much better than the pre-shredded packaged cheese. 



I forgot to get a picture of me adding the rice on top of the beans, but you can see it on the video. 


It's going in the oven!




This only takes about 20 to 30 minutes to bake. While baking, I get my taco meat and taco fixings ready. 




When this comes out of the oven, it is super bubbly. 




We love this recipe as a side with tacos, but you could spoon this into a tortilla and have as a burrito. 


You could even add your taco meat as a layer over the rice and enjoy it as a taco casserole.
