Recipe: (the way that I made it)
1/2 bag of Pictsweet Seasoning blend
(blend of onions, celery, and red peppers) you will find this with the frozen vegetables at the store
1 clove garlic
1/2 carrot, shredded
1 tbsp olive oil
3 to 4 chicken breasts, cooked and diced
(I boiled 2 large chicken breasts in some some water with a chicken bouillon cube for around 25 minutes. let cool and then chop or shred)
4 Cups Chicken Stock
Salt and Pepper, to taste
1 tsp ground thyme
16oz package of potato gnocchi
2 Cups Half and Half
1 Cup fresh spinach, chopped
Saute the seasoning blend, garlic, and carrot in the olive oil over medium heat until the onion is translucent.
Add the chicken breasts, chicken stock, salt, pepper, and thyme. Bring to a boil, then add in the gnocchi. Gently boil for 4 minutes, then turn down the heat to a simmer for around 10 minutes.
Add in the half and half and spinach. Cook for another 1 to 2 minutes or until the spinach has wilted.
I served it with a bake sourdough bread that I brushed with some garlic olive oil and rosemary.
